With the drop in temps here in MN lately, it’s only natural to crave anything cinnamon or pumpkin spice.
First of all, I thought August is supposed to be one of the hotter months?! this past week has been in the low 60’s to low 70’s!!! What in the world! I tend to forget we live in MN, the State of bi-polar weather. I did see in the weather forecast it’s supposed to get back up in the 80’s starting this weekend … WOOHOO!
My Lyme body does so much better in the heat. I’ve felt quite lethargic and really fatigued all week, I know it has something to do with the weather because all last week was really gloomy, rainy and cold, but Tuesday was sunny and a bit warmer out, so I sat out in the sun for about an hour and my energy level was SO much better after being in the sun for only an hour! I think Hawaii is calling my name 🙂
Anyways, back to the delicious mug cake.
My breakfast has consisted of 2 over easy eggs and veggies every single morning since last June. As much as I LOVE eggs, it’s nice to switch it up sometimes. I came across a chocolate mug cake on Pinterest that looked absolutely divine, and it gave me the idea to create a pumpkin spice mug cake, since I’ve been craving pumpkin spice anything this whole week. Who said having cake for breakfast is bad for you?! 😉
My dad was SO good at creating recipes from nothing. I was always amazed how he never followed any recipes, he would whip up something in minutes and it would taste absolutely delicious …. he was truly a gifted cook. My uncle was the same exact way as well and I see it in his son as well. So there must be a gene for good cooking that runs in the family that I am trying to find for myself haha. I’ve been trying to come up with recipes on my own .. it’s definitely not an easy task, and some are absolute flops but some turn out pretty darn good …. practice makes perfect, right?!
The first time I made this recipe, the consistency was not right at all. It tasted really good but it was too mushy. It tasted and looked much better the second time around! Here’s how it looked the first time I made it –
Not that appetizing, right?!? I devoured the second one I made though, It was so fluffy and yummy! Perfect for a cool breezy day!
Pumpkin Mug Cake Recipe
- 1 Banana
- 5 rounded T. almond meal/flour
- 1/2 tsp. maple syrup
- 1/2 tsp. pumpkin spice
- 1/2 tsp vanilla
- 1/2 baking powder
- 1 T. coconut oil (melted)
- Dash of sea salt
- Mash banana. I put it in a ziplock bag and mush it between fingers.
- Mix banana and all ingredients together in a mug.
- Microwave for 2 minutes!
